Easy and Delicious Cucumber Salmon Bites – A Healthy Snack Recipe

Cucumber Salmon bites are super simple, fun to eat and bonus: they’re high protein healthy! Slices of cucumber are crunchy and easy finger-food. Topped with high protein creamy goodness, flaky salmon, fresh herbs and spicy jalapeno. These cucumber salmon bites are the perfect snack, healthy appetizer or party app!

This recipe makes me happy because it’s one of those what’s in the fridge that I can throw together kind of ideas. I made these for lunch but they’d work perfectly as a snack or appetizer too.

The recipe is super simple. Really easy to put together and totally delicious.

I’ve been stuck at the lake house with no car (long story), so had to make due with what was in the fridge. Plus, we’ve had an abundance of adorable little cucumbers coming from the garden so I was excited to use those, too!

Cucumber Salmon Bites – The Details

Put together these look cute and a bit fancy but there is really nothing to them. I roasted my own salmon and made my own herb cottage cheese (okay, I didn’t MAKE the cottage cheese I just fancified it), but you can 100% get away with buying smoked salmon and chive cottage cheese at the store.

Honestly, I have an on-again, off-again relationship with cottage cheese. Somedays I love it – it’s packed with protein! And somedays I can’t handle it. Either way, it’s not exactly the star of the show here and it does just fine playing a minor role.

The Salmon

You’re going to want to roast the salmon ahead of time so that it has enough time to chill (or at least come to room temp). It’s actually super simple. Set your oven to 400 degrees. Line a baking sheet tray with aluminum foil. Put salmon skin side down on the foil (if your salmon has the skin already removed you’ll want to oil the tray first). Sprinkle with salt and pepper. Bake 12-15 minutes. Cool!

Building the Bites

With the salmon cooked, you’re 95% of the way there.

Wash and slice your cucumbers. Chop up any fresh herbs that you like and have on hand and mix those into plain, low-sodium cottage cheese. I used chive and parsley. Slice scallions and thinly slice fresh jalapeno. Now you’re ready to build.

Top each cucumber slice with about 1 tsp of the herb cottage cheese.

Use a fork to flake the salmon and then add that to your bite.

Top with sliced scallion, sliced jalapeno, more fresh herbs if you want them, and freshly cracked black pepper.

That’s it! You’re done and ready to enjoy.

You can of course go wild with your flavors and add whatever you want! Everything Bagel Seasoning is what I’m going to try next.

Cucumber Salmon Bites

Ingredients
  

  • 1 fillet wild-caught salmon skin on
  • 1 small cucumber sliced
  • 1 6oz container cottage cheese plain, low sodium
  • fresh herbs chopped
  • 1 green onion sliced
  • 1 jalaepno thinly sliced
  • sea salt
  • freshly ground black pepper
  • olive oil cold-pressed

Instructions
 

  • Preheat oven to 400°. Line a baking sheet tray with aluminum foil. Place salmon, skin-side down, on the foil. Season with salt and pepper and drizzle with olive oil. Bake 12-15 minutes. Cool completely in the refrigerator.
  • While salmon is cooling, prep your other ingredients.

Build Salmon Bites

  • Mix herbs into the cottage cheese.
  • Top each cucumber slice with 1 tsp of herb cottage cheese mixture.
  • Gently flake salmon with a fork. Top each bite with about 1 tbsp of salmon.
  • Garnish with scallion, jalapeno slices, fresh herbs and freshly ground black pepper.
