Cucumber Salmon Bites
a super simple to make, delicious and totally healthy snack bite.

- 1 fillet wild-caught salmon skin on
- 1 small cucumber sliced
- 1 6oz container cottage cheese plain, low sodium
- fresh herbs chopped
- 1 green onion sliced
- 1 jalaepno thinly sliced
- sea salt
- freshly ground black pepper
- olive oil cold-pressed
Preheat oven to 400°. Line a baking sheet tray with aluminum foil. Place salmon, skin-side down, on the foil. Season with salt and pepper and drizzle with olive oil. Bake 12-15 minutes. Cool completely in the refrigerator.
While salmon is cooling, prep your other ingredients.
Build Salmon Bites
Mix herbs into the cottage cheese.
Top each cucumber slice with 1 tsp of herb cottage cheese mixture.
Gently flake salmon with a fork. Top each bite with about 1 tbsp of salmon.
Garnish with scallion, jalapeno slices, fresh herbs and freshly ground black pepper.
