Cucumber Salmon Bites

a super simple to make, delicious and totally healthy snack bite.

Ingredients
  

  • 1 fillet wild-caught salmon skin on
  • 1 small cucumber sliced
  • 1 6oz container cottage cheese plain, low sodium
  • fresh herbs chopped
  • 1 green onion sliced
  • 1 jalaepno thinly sliced
  • sea salt
  • freshly ground black pepper
  • olive oil cold-pressed

Instructions
 

  • Preheat oven to 400°. Line a baking sheet tray with aluminum foil. Place salmon, skin-side down, on the foil. Season with salt and pepper and drizzle with olive oil. Bake 12-15 minutes. Cool completely in the refrigerator.
  • While salmon is cooling, prep your other ingredients.

Build Salmon Bites

  • Mix herbs into the cottage cheese.
  • Top each cucumber slice with 1 tsp of herb cottage cheese mixture.
  • Gently flake salmon with a fork. Top each bite with about 1 tbsp of salmon.
  • Garnish with scallion, jalapeno slices, fresh herbs and freshly ground black pepper.
