These smokey, scallion-studded black beans are as easy to make as cereal. They’re delicious and healthy and they’re done in ten minutes!
Jump to RecipeI was obsessed with the Tex-Mex restaurant Chi-Chis for my entire childhood. Any time my parents asked me where I wanted to go (special occasion or not), it was Chi-Chis. I never ventured too far past a burrito or quesadilla with refried beans, but I crushed it every time with some chips and salsa and loved every minute of every meal. It’s possible I cried when Chi-Chis closed.
I’ll still never say no to Taco Tuesday. That’s where this recipe gets the most use. It’s rich and filling without adding anything other then spices and water. Plus, it’s done super fast and it’s super cheap!
Smokey Cumin Black Beans Ingredients
- Black beans
- Water
- Ground cumin
- Ground coriander
- Sea salt
- Green onion
- Cilantro
I opened my fitness studio at the beginning of July and since then life hasn’t slowed down. Unless it’s the weekend (when we jet immediately to the lake), I’m either at the studio, at my computer working on classes for the studio, or at my full time job at the mountain. Don’t get me wrong, I love it. But more often than not I find myself with very little energy to help my husband with dinner when I get home (sorry babe).
We’re pretty much pros at whipping up dinner from whatever happens to be in the fridge. We always have beans of some sort in the pantry and this recipe couldn’t be easier to make. I’m just thankful that it’s also healthy!
Canned Black Beans
The trick to keeping this dish rich and full-flavored is to keep the liquid in the can of black beans. I know, every recipe you’ve ever read says to rinse the black beans. Not this time. That liquid is just water and naturally produced starch from the beans…you need that for this dish! *When buying black beans, grab organic when possible and always grab low-sodium.

I’m obsessed with guacamole. I’d eat it every night if I could afford avocados when they are $1.99 each in Vermont (come on now). One of my favorite meals is homemade guacamole, smokey cumin black beans, baked sweet potato nachos and a “healthier” margarita like this one from Wellplated.com.
Smokey Cumin Black Beans
Ingredients
- 1 can black beans
- 1/4 cup water
- 1/2 tsp ground cumin
- 1/4 tsp ground coriander
- 2 green onions sliced
- 2 tbsp cilantro chopped
Instructions
- Heat beans, water, cumin and coriander in a small sauce pot over medium-high heat. Simmer, stirring occasionally, for 5-6 minutes. Turn off heat. Using a potato masher, gently mash the beans until they are mostly smooth (leave some texture to them). Stir in scallions and cilantro.
