Flourless Banana Pancakes

A recent survey done by Food Insight discovered that though 93% of Americans agree that breakfast is the most important meal of the day, fewer than half (44%) eat it daily.

Growing up, I wasn’t allowed to leave for school before finishing some sort of breakfast and no, Frosted Flakes was not considered breakfast. Luckily I had a mom who, after making that proclamation, took it upon herself to make my brother and I eggs, or French toast, or oatmeal every single morning.

 These days, I typically reach for eggs, whole wheat English muffins and fruit in the morning. It’s easy, light, well-balanced and it makes me feel good. But every so often, typically as the weather gets colder and my husband and I have a morning off together, I crave something sweeter and heartier. Pancakes are one of those breakfasts that remind me of my childhood, and it’s always fun to mix up a batch for a late morning brunch.
