Sweet, tangy and healthier than any store bought version. Triple Berry Chia Seed Jam is super easy to make and for sure a new staple in your recipe box.
Anyone else been in the mood to cook lately? Maybe it’s my new kitchen that is slowly coming together or maybe it’s the fact that I’m home all day (and finally have time!), but lately I just want to pull out all of my cookbooks and get creative!
This triple berry chia seed jam doesn’t take a lot of time or work. It’s packed with bright flavor and color which makes it great for breakfast on a dreary day.
Ingredients
Frozen Berries
I used an organic, frozen berry blend because it was in our freezer, but you could absolutely use substitute fresh berries instead. Or, if you only have one type of frozen berry…use ’em! I recommend sticking with berries, since their natural sugar content balances the acidity nicely.
Chia Seeds
Despite their tiny size, chia seeds are packed with nutrients. They are packed with antioxidants and omega-3 fatty acids, a highly important fat that most of us don’t get enough of! Chia seeds also contain iron, calcium and fiber.
The soluble fiber in chia seeds give them their gelatinous consistency when soaked in liquid – and that’s exactly why I use them in this recipe! The chia seeds become a thickening agent as they absorb the liquid from the lemon juice and cooking berries.
Lemon Juice
I used fresh lemon juice for this recipe since I’m not a big fan of the store-bought lemon juice that comes in a plastic lemon bottle. If you don’t have fresh lemon, you can absolutely substitute lime juice or even orange juice (although the latter won’t provide quite the same amount of contrasting tanginess, which I really like).
Honey
Using raw, local honey offers a litany of health benefits. Honey is a good source of antioxidants and it has antibacterial properties (one of the main reasons it’s been used in folk medicine for thousands of years)!
Most of the honey that you find in grocery stores is not raw, so I recommend either buying local or really reading your labels.
*BONUS* I found this awesome website for finding and buying local honey, wherever you are in the United States!
Thyme + Salt
Thyme and salt are optional ingredients, but highly recommended! Neither ingredient plays a prominent role flavor-wise, but I like the “hmm, what is that” factor that fresh thyme plays in this savory recipe. Plus, sea salt has this magical power that makes every other ingredient flavor stand out.
Triple Berry Chia Seed Jam
Not that it takes much time (all of 6-8 minutes), but this recipe is totally worth making!
Triple Berry Chia Seed Jam
Ingredients
- 2 cups Frozen berry blend
- 1 tablespoon chia seeds
- 1/2 tablespoon lemon juice
- 1 tablespoon honey
- 1 sprig thyme *optional
- 1 pinch sea salt *optional
Instructions
- In a medium sized sauce pot combine berries, chia seeds, lemon juice, honey, thyme and a small pinch of salt.
- Bring to a simmer and cook 6-8 minutes, using a wooden spoon to mash berries as the cook and stirring frequently so as not to burn. Berries will break down and flavors will combine.
- Store in an air tight container in the fridge until ready to use.
- *The jam will set up slightly as it cools, so don't worry if the consistency seems too loose while cooking.
When it comes to healthy eating, one of the BEST things you can do to set yourself up for success is to clear your kitchen of the junk food. Throw out the processed jams and ultra-sweet jellies and fill your shelves with healthier versions of your favorite foods. Do a kitchen makeover. Throw out the junk food that tempts you when you come home starving, or is readily available when you’re bored, or you’re just craving something sweet. Then pack your fridge and cabinets with ready-to-go, healthy and DELICIOUS options in. #win.
This Triple Berry Chia Seed Jam will last in your fridge for weeks! It’s good for breakfast (heyyy PB&J sandwiches). It’s good for a snack with yogurt and nuts. And it’s good for dessert over some frozen yogurt!
