A recent survey done by Food Insight discovered that though 93% of Americans agree that breakfast is the most important meal of the day, fewer than half (44%) eat it daily.
Growing up, I wasn’t allowed to leave for school before finishing some sort of breakfast and no, Frosted Flakes was not considered breakfast. Luckily I had a mom who, after making that proclamation, took it upon herself to make my brother and I eggs, or French toast, or oatmeal every single morning.
These days, I typically reach for eggs, whole wheat English muffins and fruit in the morning. It’s easy, light, well-balanced and it makes me feel good. But every so often, typically as the weather gets colder and my husband and I have a morning off together, I crave something sweeter and heartier. Pancakes are one of those breakfasts that remind me of my childhood, and it’s always fun to mix up a batch for a late morning brunch.
If you’re a pancake-lover or even just a pancake-dabbler, but want something that sits lighter in your stomach after a plate-full and leaves you hungry an hour later, these Flourless Banana Pancakes are the perfect start to your day. They’re naturally sweetened by ripe bananas and they’re made with eggs and egg whites, which provide slow-digesting protein so you stay fuller longer.
