Creamy Green Onion Dressing

Do you ever go through food phases? I’m going through one right now. It’s called “creamy dressing” phase. Creative, I know. But I’ve been craving creamy dressings lately (I’m typically a balsamic vinegar kind of gal). Kale Caesar salads, creamy mustard vinaigrette on hearty winter greens – for whatever reason, I can’t get enough.

But I’m really not looking for the canola oil-packed dressing with lots of sodium, sugar and other additives that just make me feel lethargic. Most bottled dressings that you find at the grocery store, even the “natural” and organic brands, have canola oil as the first ingredient. Canola oil is often genetically modified and hydrogenated. To the rescue: Greek yogurt.

I’m a huge fan of Greek yogurt and use it as a food-swap every single day. I use it instead of mayonnaise, instead of sour cream, instead of salad dressing, instead of ice cream (really, one of the best froyos I’ve ever had was simply Greek yogurt and maple syrup). I use full-fat, plain Greek yogurt in this recipe. Full-fat?! Yep.

Why do I use full-fat, plain Greek yogurt in this recipe? A few reasons.

I’m not using a ton of it, so I’m not concerned about the fat content in full-fat yogurt. I’m using it as a salad dressing, not topping it with granola and honey or chocolate chips so I’m not concerned about over-doing it calorie-wise. Instead, what I want is the texture and fullness of flavor that full-fat Greek yogurt has. The full-fat version is creamy in a way that fat-free and low-fat versions are not – and it’s perfect for slaw dressing!

I made Creamy Green Onion Dressing specifically for this slaw on taco night but I ALWAYS make extra (and I encourage you too), because it’s just so yummy and goes with pretty much everything (wing night, anyone?).

I use Green Mountain Creamery all-natural, 5% plain Greek yogurt in this recipe. I love buying locally produced ingredients, and this yogurt just happens to taste amazing. It doesn’t have that gritty mouth-feel that you can sometimes find in Greek yogurt. P.s. if you’ve never had their Maple Greek yogurt – you are missing out BIG time. It’s amazing.
