- No refined ingredients. This isn’t a tricked-ya kind of recipe where the real binder is some funky ingredient. Nope! Just simple, high-quality and healthy ingredients.
- Easy clean up! This is a 1 bowl recipe.
How to Make Almond Butter Chocolate Chip Breakfast Cookies
Step 1: Preheat the oven to 350 degrees. Spray cookie sheet (I used 2), with cooking spray.
Step 2: Combine banana and egg in a large mixing bowl. Using a fork, mash banana until the big chunks disappear. Add the rest of your ingredients and use a wooden spoon to stir and combine.
Step 3: Scoop 2 tablespoons of batter into a ball. Flatten slightly between your palms and place on cookie sheet.
Step 4: Bake 12-14 minutes, rotating cookie sheet half way through, until the edges start to brown. Remove from the pan and place on a wire rack to cool completely.
Breakfast Cookie Substitution Ideas
This is one of those rare-find baking recipes with some room for creativity. You can make a lot of substitutions here, adding and swapping ingredients that you love.
- Nut butter. This is one of those recipes where any nut/seed butter will do. Really the butter is your binder – so choose whatever you love or whatever you have on hand!
- Sweetener. I used honey in this recipe but I live in Vermont, so I’ll absolutely be subbing in some real maple syrup! You could also use an apple butter or pumpkin butter to sweeten the deal.
- Add ins. We had mini dark chocolate chips floating around the pantry so that’s what I grabbed for this batch. You could also use cinnamon chips or dried raisins, cranberries or apples. I’m a big fan of adding nuts to baking recipes and lean towards walnuts, pumpkin seeds, sesame seeds and pecans.
- Level up. In the mood to level up your nutrition game? You could easily add hemp seeds or flax seeds to give your omega-3s a boost!

Almond Butter Chocolate Chip Breakfast Cookies
Ingredients
- 2 ripe bananes
- 2 large eggs
- 2 1/2 cups rolled oats
- 1 cup almond butter
- 3 tablespoons honey
- 1/4 cup mini dark chocolate chips
- 1 1/2 tsp cinnamon
- 1 pinch sea salt
Instructions
- Preheat oven to 350 degrees. Spray 2 cookie sheets with cooking spray.
- In a large bowl, combine bananas and eggs. Mash with a fork until the mixture is as smooth as you can get it.
- Using a wooden spoon, mix in the rest of the ingredients. *If your almond butter is too thick to mix, try microwaving it or 20-30 seconds before adding it to the bowl.
- Portion out 2 tablespoons of the dough (it will be loose). Roll into a ball and then gently flatten. Place on cookie sheet.
- Bake 12-14 minutes, rotating half way through, until edges are golden brown.
- Remove from cookie sheet and allow to cool on a wire rack.
